I threw this together last night and it came out tasting pretty good. It's quick and easy for a last minute meal.
1 lb. turkey burger (or any ground meat you like)
3 c. Rotini (spiral pasta...or any small pasta you have on hand)
1 lg. can diced tomatoes
about 3-4 green onions, chopped
Velveeta cheese
Cook meat and drain. Meanwhile cook pasta according to package directions and drain. Throw everything together in a 9x13 baking dish. Put however much cheese you like on top. Bake at 350 degrees for 20 minutes or until cheese is melted.

I was with you until the "veveeta cheese" part. If this is VELveeta - it isn't real cheese, but a strange sub-food that doesn't need to be stored in the fridge. Put some REAL cheese on top, say the stuff from a cow, goat, whatever and it would be doable, cheap meal even for an ever-so-slightly picky Italian and children.
I was going to add "or other cheese you have on hand" next to the Velveeta, but I wasn't sure it would have the same wonderful creamy taste. For some reason I had a feeling you were going to make a comment about my Velveeta. Go ahead a add your "real" cheese and see how you like it. You have permission to alter my recipes, but I will not be held responsible for the results :)
I hear you Lori on the "real" cheese, but I must say that we all need a little Velveeta in our lives.
Yeah, yeah - Elizabeth...you're on the other end of the food chain with your comsumption of whole wheat pasta (blah!!!)...hmm...I wonder what whole wheat pasta would taste like with a little melted Velveeta on top...
It's like the two would cancel each other out, right? Bad sub-food with extreme natural food equals a zero gain or loss on the scale of nutrition. I swear my theory here will be the next big fad in dieting. We'll call it the "zero out" diet...
I used to buy wheat speghetti. It's higher in fiber. I don't know how well it would go over in this house, but it's a good reminder that it's out there.

You gotta try Barilla Plus. We actually prefer it to the regular stuff. And yes, I've made my own "hamburger helper" using the Velveeta on the whole wheat wheat pasta. MMMMMMMmmmmmmm
